The International Congress on Fresh and Processed Meat returns to Italy after 21 years

The 69th International Congress of Meat Science and Technology (ICoMST), the only international scientific and technological congress dedicated specifically to fresh and processed meat, will be held in Padua from 20 to 25 August 2023 at the new "Padova Congress". .

The ICoMST is an annual event held in various locations around the world and has a long history dating back to the first meeting held in Helsinki in 1955. In its 69-year history, the ICoMST has been hosted in Italy only once, in 2002 in Rome at the FAO headquarters.

The main objective of the 69th edition is to share knowledge and experiences in the field of meat science and technology through a high quality scientific program which includes keynote lectures by renowned scientists from the academic and industrial world, short communications oral presentations by young researchers and poster sessions.

The topics that will be covered in the five days of the Congress range from zootechnical, environmental and animal welfare issues to the biochemistry of muscle and meat, microbiology, quality, safety, sustainability of meat and cured meats, the enhancement of meat products protected, to processing, transformation and conservation technologies. Furthermore, this year some "hot" topics will be explored such as that of "alternative" products to meat, i.e. "cultivated meat" and "vegetable meat or plant-based meat" and the use of insects in animal feed . Finally, the scientific program is completed by the round table "Meat and Society", the continuation of the "Dublin Declaration" (, in which the importance of meat will be discussed and zootechnics for the environment, human health, the economy and today's society and solutions will be proposed to improve and make the meat and its derivatives chain even more sustainable.

More than 500 delegates from 43 countries are registered for the event.
