First 2023 leg of Federcarni Young Butchers Championship kicks off, starring Irish meat

The event will be held this Sunday, Feb. 12, at the ADO & Alberghiero Orio Vergani Institute in Ferrara

Once again in 2023, Irish beef and lamb will continue to take center stage at the event organized by Federcarni, the National Federation of Butchers, which continues its partnership with Bord Bia, the Irish government body for the development of export markets for food products from the Emerald Isle.

Ferrara, the city that blends the Middle Ages and the Renaissance will host, on Sunday, February 12, the first 2023 stage, and second semifinal, of the Italian Young Butchers Championship, the exclusive official and nationally significant competition dedicated to butchers under 35, in which the young promises of the sector will compete "in knife fights."


The event will take place at the ADO & Alberghiero Orio Vergani Institute (via Luciano Chailly), where the competition field will be set up. This will be an opportunity for butchers, experts and meat lovers to learn about Irish beef and lamb, highlighting its valuable characteristics, from appearance to flavor and tenderness, nutritional properties and attention to the sustainability of a meat that is "good by nature."  As usual, the candidates will face a test in which they will have to process the meat delivered to them, according to precise rules and taking into account that they will be judged on the basis of 10 evaluation criteria (boning, sectioning, manual dexterity of the cut, order and cleanliness, minimum waste, inventiveness and imagination, presentation, tasting, cooking and sausage creation). For each of the criteria they will receive, from a qualified jury, a grade from 1 to 5 knives. The final vote will be the sum of the votes awarded for each of the criteria.
