In the event, the best PDO dairy in the province of Bologna will be awarded

On Wednesday 4 October, Bologna will showcase its gastronomic jewel par excellence: the tortellino. In fact, the 11th edition of the Tortellino Festival will take place at Palazzo Re Enzo, during which the best taste professionals will offer the public 21 tasty recipes in which the protagonist will be the king of Emilian cuisine, recognized in 2021 as De.Co. by the Municipality of Bologna. One of the essential ingredients of tortellino has always been Parmigiano Reggiano, the DOP icon of Italian gastronomic know-how. New to this 11th edition of the Festival will also be the Palio del Parmigiano Reggiano di San Petronio, which will see the participation of the Parmigiano Reggiano Consortium with a competition to reward the best dairy in the province.
During the event, tastings of Parmigiano Reggiano aged for 24 months from the 9 producing dairies in the province of Bologna will be offered. In fact, there are 4 dairies in the mountains and 5 in the plains in the area to the left of the Reno which produce around 100,000 wheels of Parmigiano Reggiano annually. The best dairy in the province of Bologna will be decreed in the following way: all guests of the Salone del Podestà will be able to express their opinion. A special prize will also be awarded based on the evaluation of the restaurateurs of the TOur-tlen Association, which brings together chefs from Bologna (and beyond) created to give new flavor and impetus to the city starting from the commitment of taste professionals. Finally, a jury of experts from the Parmigiano Reggiano Tasters Association (APR) will evaluate the same samples to give a technical opinion and decide the best.
