Irish meat is once again the protagonist of the Italian Young Butchers Championship in Federcarni

The competitions with the Irish meat continue on Sunday 2 October at the exhibition halls of San Donà di Piave (VE) and on Sunday 16 October at the Bari Exhibition Center

The Young Butchers Championship of Federcarni, in collaboration with Bord Bia, the government body for the promotion of Irish food & beverage, continues its second edition with a double stop in October. The first and only official competition reserved for Italian butchers under 35, will move from Veneto to Puglia with events open to the public and in conjunction with important local fairs.

Irish beef and lamb will once again be the protagonist of the fourth and fifth round: it starts on Sunday 2 October from 10:00 in San Donà di Piave (VE) at the exhibition halls in via Pralungo, during the well-known event local "Le Fiere del Rosario", and then land in Bari on Sunday 16 October, at the Exhibition Center (via Lungomare Starita 4), within the 85th edition of the Fiera del Levante.

Inserted in frames of great passage, the two highly anticipated meetings of the Championship will have the aim of enhancing the young talents of the butchery and bringing the general public and professionals in the sector closer to Irish beef and lamb, highlighting their characteristics, nutritional properties, attention to sustainability and proposing different methods of preparing a “Good for Nature” meat.

Participants from the two provinces and surroundings will in fact face each other in a meat processing test following very specific rules and will be judged by an exceptional jury composed of chefs, professional butchers and representatives of the institutions, according to ten evaluation criteria: boning, cutting, manual cutting, order and cleanliness, minimum waste, inventiveness and imagination, presentation, tasting, cooking and creation of sausages. For each criterion the jury will assign a vote ranging from 1 to 5 knives; the final mark will be given by the sum of the marks assigned for each of the criteria.

The well-established partnership between Irish meat and Federcarni will include, in addition to participation in the Young Butchers Championship, also the organization of professional courses and much more, always in the name of enhancing and promoting a raw material of excellence.About Bord
