Irish meat towards the finals of the Italian Young Butchers' Championship

The Italian competition that promotes the talent of the new generation of butchers is coming to an end: the first semi-final kicks off on Sunday 13 November in Catania at the 'Sicilia Fiera' trade fair centre in Misterbianco

Bord Bia, the government body for the promotion of Irish food & beverage, and Federcarni, the National Butchers Federation, together again in the first semifinal of the Italian Young Butchers Championship, the first and only official competition of national importance dedicated to butchers under 35, which arrives in Sicily for the sixth stage of the 2nd edition.

At the base of the initiative aimed at promoting the professional growth of young talents in the sector, Irish meat is once again confirmed with quality cuts of beef and lamb, easily recognizable by the burgundy red color of the pulp, rich in vitamins, and by the golden fat that covers it.
To give the meat an unmistakable look and taste is the Grass Fed feeding, the farming method that still applies traditional practices, handed down over the years, in full respect of animal welfare and in harmony with nature, allowing to obtain a premium product that retains all its tenderness during cooking.

The meeting, open to the public, will see participants from traditional, gastronomic and gourmet butchers in the area, challenge each other "with knives" on Sunday 13 November from 10:00 at Hall C2 of the "Sicilia Fiera" exhibition center, in via Bologna 76, Misterbianco (CT).

A qualified jury made up of chefs, professional butchers and representatives of institutions will evaluate the processing of the meat according to eight criteria: deboning, cutting, manual cutting and binding, order and cleanliness, minimum waste, inventiveness and imagination, presentation and tasting of the cuts of meat. The sum of the votes assigned, for each technique from 1 to 5 knives, will decide the first four finalists who will compete for the title of Italian under 35 champion for the 2022 edition.

The now solid partnership between Irish meat and Federcarni will include, in addition to participation in the Young Butchers Championship, also the organization of professional courses and much more, always in the name of enhancing and promoting a raw material of excellence.
