The Balsamic tradition in the territories of the ancient Duchy of Este read through the lens of experts
The first International Conference on the ageing of vinegars, organised by the Consorzio Tutela Aceto Balsamico Tradizionale di Modena (Consortium for the Protection of Traditional Balsamic Vinegar of Modena), will be held on Saturday 8 March at the Chamber of Commerce of Modena. The aim is to answer the question of how the production process of Traditional Balsamic Vinegar in the territories of the ancient Duchy of Este differs from vinegars from other countries of the world, where the vinegar tradition has played a fundamental role in the evolution of the country itself, such as Spain or China.
The meeting will be chaired by Enrico Corsini, president of the Consorzio Tutela Aceto Balsamico Tradizionale di Modena.
The alternating speeches will feature comparisons between Italian, Spanish and Chinese vinegars.
