Economic figures for 2025: a total of 525,000 kilograms were used for tubs, representing a retail value of €30 million. Exports are also soaring, now accounting for over 30% of total sales
There has been a real boom in pre-sliced products, which have grown by 26% and have been driven mainly by demand from abroad, accounting for over 30% of sales with more than 700,000 kilos exported. These are some of the key figures from the Consorzio della Coppa di Parma IGP, the protection body comprising 21 member companies, representing a sector employing over 500 people, including direct staff and workers in related industries, which closed 2025 with a retail turnover of €78 million.
Over the past year, volumes remained in line with 2024, with 3.5 million kilograms of processed meat, of which 1.8 million (–6%) was destined for the certified product, generating a production turnover of approximately €29 million. Whilst the cost of the raw material (namely the muscle portion of the pig’s neck) has not risen after three consecutive years, albeit with prices still well above the pre-Covid average, the most significant news comes from pre-sliced products. Coppa di Parma PGI has in fact seen exponential growth over the past year (+26%), rising from 415,000 kilograms in 2024 to 525,000 in 2025. This increase brings the value of retail packs to €30 million (up from €25 million previously), thus accounting for 38% of total turnover, which stood at €78 million (compared to €74 million in 2024).
This increase is mainly due to the international market, where exports accounted for over 30% of total sales: the main export area is Europe, where France remains the leading market, whilst Canada remains the key market among non-EU countries. In Italy, however, the large-scale retail sector, with a 70% share, represents the main sales channel, whilst the Ho.re.ca. — which is fundamental for the Consortium both in terms of reputation and product promotion — accounts for around 30%.
