Puok, the burger store with two locations in Naples, at Vomero and Spaccanapoli, inaugurates 2023 with a new sandwich: Diego Armando Masardona. A tribute to Naples, to fried pizza, to Maradona and to the Antica friggitoria La Masardona, the temple of Neapolitan fried pizza since 1945.
A name that is a whole programme, like all Puok’s sandwiches. In three words, the quintessence of Naples: the myth of fried pizza and that of Maradona.
Puok’s Diego Armando Masardona sandwich contains exactly the ingredients of a complete fried pizza, but re-imagined and layered in perfect PUOK style: Neapolitan “cicoli piastrati” (with salt and pepper), breaded and fried provola cheese, roasted cherry tomato cream, ricotta cheese with salt and pepper, basil.
The intention is to celebrate Battilocchio, the first Neapolitan fried pizza, born after the war, made with simple and inexpensive ingredients: ricotta cheese, pork cracklings and pepper. But that's not all, Egidio Cerrone, co-founder and creative soul and palate of Puok, immediately declares his devotion to La Masardona, the old Neapolitan fry shop owned by the Piccirillo family, which still offers the classic recipe of his grandmother, known as la Masardona, who kneaded and fried in the street below the house.
«For me, the Masardona is a true Neapolitan monument, a place of worship to put in the guidebooks between the Veiled Christ and the Fontanelle Cemetery. The historic site is a long way from the centre, but just take a walk around there and you can feel the true essence of Neapolitanism. Workers queuing up in the morning to get their “marenne fritte”, people from all over, but above all locals, families still linked to that blessed lady, the Masardona, who many years ago fried pizzas in her vascio. Today the business is run by Enzo Piccirillo, and for me Enzo has always been a sort of guiding spirit, always there, with a smile and irony, but also with the seriousness of the masters, to teach his collaborators the art of frying handed down through the generations, to his sons above all, Salvatore and Cristiano, who today successfully run the Mergellina and Rome locations. For me Enzo is the Maradona of fried pizza, for him fried pizza is not just one more thing, it is his life, and in making a tribute to Naples through his pizza, I couldn't have chosen a better name for this new sandwich: DIEGO ARMANDO MASARDONA, because that is what we should call Enzo Piccirillo» comments Egidio Cerrone.
From today, Diego Armando Masardona is available in the burger stores in Via Cilea al Vomero and Spaccanapoli.
