The Consorzio della Coppa di Parma updates the specifications: modified weight of pigs used for IGP

The Consorzio di Tutela della Coppa di Parma IGP has completed the process of updating its specifications, which have already been approved by the Ministry and published in the Official Gazette (Decree of 21 January 2025, published in the Gazzetta Ufficiale (Italian Official Gazette) no. 27 of 03-02-2025). The amendments concern various points to further improve the traceability of the raw material and even stricter compliance with the requirements set out in the specifications, from the feeding of the pigs to the genetic types and combinations permitted, with a substantial change as regards weight: the specifications no longer provide for the average live weight — which was 160 kg with a 10% tolerance — but rather that of the individual carcass, now between 110.1 and 190 kg, recorded at the time of slaughter.
