Asiago Cheese Protection Consortium launches “Asiago Academy on tour”
The Asiago Cheese Protection Consortium chooses to invest in training food industry professionals by providing retailers and counters with correct information about the product and how to best promote it

The Consorzio Tutela Formaggio Asiago promotes “Asiago Academy on tour”, the new training project on the latest characteristics and types of Asiago DOP cheese that supports professional operators with a theoretical-practical course to make the most of their role as ambassadors of the quality product.
The “Asiago Academy on tour” project, carried out in collaboration with partner Gambero Rosso Academy, Gambero Rosso’s multidisciplinary training area, is dedicated to those who wish to stay up-to-date with the new needs of consumers, who are increasingly attentive to the naturalness of products and their certain origin, and to discover all the new features introduced in the latest changes to the Asiago cheese production specifications.
Led by Leo Bertozzi, an expert in the management of quality agri-food productions and dairy culture, the training will deepen the knowledge of the founding values of Asiago DOP, starting with those of a well-being based on a natural production method, an authentic expression of the territory of origin and respectful of biodiversity. Hence the experience of the recently introduced types, starting with Asiago DOP Fresco Riserva, aged for more than 40 days, Asiago DOP with vegetable rennet and the long aging of Asiago DOP Stagionato, a 100% natural product, without lysozyme. The itinerary will be enriched by a guided tasting and a special section dedicated to practical advice on how to set up the display counter, cut the cheese and present the specialty in the best possible way, enhancing the individual seasonings, pairings and reducing food waste.
The first two events, with free admission while places are available, will be held in Turin, on March 9, at the Mercato Centrale Torino - Aula Didattica Primo Piano (Piazza della Repubblica 25) and in Rome, on March 23, at the Gambero Rosso Academy - Sala Tre Bicchieri (Via Ottaviano Gasparri 13/17), with sessions from 10:30 a.m. to 1 p.m. and from 3 p.m. to 5:30 p.m.
