Of the 73,550 sealed culatelli, 38,004 (51.6%) were destined for 1.07 million trays
The value of pre-sliced Culatello di Zibello PDO exceeds the threshold of 50% of the entire annual production for the first time. This was confirmed by the Consortium when communicating the economic data for 2024, which closes with a consumer turnover of 18.5 million euro. A historical value, the one related to trays, never reached in the 15 years since the Consortium was founded: in 2024, out of 73,550 sealed culatelli, as many as 38,004 were destined for pre-sliced products, thus reaching 51.6% of the total. And looking at historical data, in volume terms, only in the record year of 2022 (with 102,591 culatellos sealed when production restarted completely post Covid) were more, with 40,171. Overall, out of a consumer turnover of 18.5 million euro, 10.2 come from pre-sliced (in 2019 it was 7.3) with 1.07 million trays placed on the market.
«In 2020, the average price of pork leg on the bone was €3.73 per kilo; currently, given 2024, we have reached €6.08: almost double» reiterates Romeo Gualerzi, president of the Consorzio di Tutela del Culatello di Zibello DOP. «These are stratospheric quotations that translate into an inevitable reduction in consumption due to lower purchasing power. In addition, as a Consortium we have applied even stricter rules on the specification, with modern controls able to guarantee greater guarantees; applications that in part reduce the availability of thighs on the market».
