On 19 October, as part of the 35th Aeht (European Association of Hotel and Tourism Schools) Annual Conference, a not-to-be-missed appointment for the entire world of professional training in the Horeca sector, the Consorzio della Finocchiona IGP will be the protagonist of the round table within the event “Open, Forum of Innovation, Biodiversity and Restart” to be held at the “Alfredo Panzini” Higher Education Institute in Senigallia. In fact, from 17 to 22 October, the city will become the European “capital” of tourism and hospitality schools and universities: Olympics-style competitions among students, a trade fair for companies in the sector, show-cooking events with international and starred chefs, training, conferences and round tables. Protagonists will be the big names in institutions, cuisine, hospitality and professional training. This will be an important opportunity for all catering and hospitality operators to meet: they will be true “States general” for Italian tourism and hospitality.
On Wednesday 19, the focus will be on “The territory at the table”, with the participation of the Ministry of Agriculture, the association Le Soste, the University of Camerino, Coldiretti, AIS, Accademia Marchesi, Tipicità Marche, A.M.A.P. On this day when the topic of territory and biodiversity will be discussed, Finocchiona IGP will be present to talk about the link between the product and the Tuscan territory, and the sustainability project linked to the protection of biodiversity started in 2021 with the adoption of some beehives to a Tuscan company that produces wild fennel, an irreplaceable element to give Finocchiona its unmistakable taste, and true sentinels of the ecosystem.
Safeguarding bees and biodiversity is one of the programmes that the Consorzio della Finocchiona IGP wanted to pursue in order to make its contribution to the creation of an eco-sustainable and integrated environmental development, which is essential for the respect and recovery of typical regional production and for the preservation and valorisation of the traditions and heart of Tuscany.
