Good performance of pre-sliced: 12.4% increase over 2023
It is a 2024 that closes with a crescendo for the pre-sliced segment that confirms itself as the trend most appreciated by consumers of Tuscan PDO Ham. The data, in this regard, speak for themselves: the number of sliced hams increased by 17.6% compared to 2023, registering the sale of about 3 million trays, for a growth of 12.4% again compared to the previous year. However, the cutting counter remains an important purchasing method for that part of consumers that likes to enjoy sliced Prosciutto Toscano PDO.
The Consortium, which includes 19 Tuscan companies that produce the PDO, confirms this trend, which is however part of a general picture that still causes some concern due to the increase in raw material prices in 2024 (partly due to the spread of PSA in Italy), as reiterated by Fabio Viani, President of the Consortium of Tuscan Ham, to which must also be added an increase in energy costs that have negatively influenced the general production of Tuscan Ham, which has recorded a slight drop in 2024.
Exports are doing well, whose percentage remains stable at close to 11% of total production. This is also thanks to the initiatives promoted by the Consortium, such as participation in the GUSTO project, a three-year project co-financed by the European Union.
