The Italian Consortium for the Protection of Mortadella Bologna, on the occasion of Valentine's Day, has decided to give admirers of the Pink Queen of Salumi an original recipe to give to their loved one. A gesture that will have an added value because it will not be a purchased gift, but made ad hoc and certainly made from the heart.
Here is the original recipe, The savory shortbread hearts with mortadella mousse, easy and quick to prepare:
150 g Mortadella Bologna
50 g spreadable cheese
250 g flour
1 egg yolk
125 g butter
50 g cooked beet
Blend beet, add butter, flour, salt and egg yolk and blend quickly. Knead quickly on a pastry board and refrigerate for about an hour. Keep aside 2 slices of mortadella and whisk the rest with the cheese to make the filling. Roll out the dough and cut out small hearts. On half of the cookies carve smaller hearts in the center to make a hole. Transfer them to a baking sheet and bake for about twenty minutes at 170 degrees. Let them cool and fill the small hearts without the hole with mousse. Cut out small hearts from the mortadella slices, place them on top of the mousse and cover with the cookies with the hole.
