"It is necessary to let the consumer know the origin of the product, not only at the supermarket, where it is already compulsory, but also at the restaurant, where we have no information about the fish we choose, nor, consequently, guarantees of traceability".
Pier Antonio Salvador, president of API, the Fish Farmers' Association of Confagricoltura, which represents 90% of Italian aquaculture companies, highlights the importance of more information on the fish consumed in restaurants, especially in the summer period, when there is a significant increase in demand proportional to the increase in the flow of tourists in our country.
