Cultured fish and transporting the fresh: the future of aquaculture and food safety at AquaFarm

In the seafood edition of the Frigo 'n' Motion series of meetings, organised by OITAF, the Interdisciplinary Food and Drug Transport Observatory, on the occasion of AquaFarm, some of the central themes of the sector will be addressed

Fish and shellfish farming represents a crucial source of protein for a growing global population. Waste is no longer allowed, the demand for quality is always growing and the safety of the food we eat is a priority. This is why organoleptic and nutritional conservation is a fundamental component of the fish and shellfish value chain.
In the edition dedicated to seafood of the Frigo 'n' Motion series of meetings, organized by OITAF, the Interdisciplinary Food and Drug Transport Observatory, on the occasion of AquaFarm, some of the central issues of the sector will be addressed. Ana Cristina De Aguiar Saldanha Pinheiro of the University of Bologna will talk about conservation methodologies and technologies for extending shelf life, Stefano Brivio, technical director of MGH, about digital tools for transport monitoring and product traceability also through the use of blockchain, Luca Sperandio, from Fiorital will address the topic of techniques for the transport of fresh fish, Marco Masini, President of Asercom will talk about the new regulations on the use of refrigerant gases, and, finally, Alessandro Roda from Man Italia, of the strategies of transport suppliers for the sector.
