Bord Bia, the Irish government's Emerald Isle food & beverage promotion body, fully understands this link and brought in Alessandro Di Flaviano, a food scientist specialising in hygienic food safety, to understand the scientific process that connects the traditional free-range method and the animal's diet, with meat characterised by a distinct burgundy red colour and golden fat.
