Slaughtering profitability holds up in May despite the drop in the market for fresh cuts. The price of cured Parma Ham falls

The profitability of closed-cycle pig farming in Italy fell by 4% in May, while the comparison with last year's figure remains favourable: +23.2%. The slowdown in the sector is attributable to the falling price of heavy slaughter pigs destined for the protected circuit, which in May lost 5.1% month on month, stopping at 1.971 euro/kg and showing a negative trend also at trend level (-8%).
