Capturing the scent of wine is now possible, and Fattoria di Petrognano, a winery owned by the Pellegrini family that celebrated its 60th vintage in 2023, is one of the first wineries in Italy to believe in the project. The device that recovers some of the organic compounds that are lost during fermentation is called Aromy and is the result of a collaboration between the Department of Agricultural, Food, Environmental and Forestry Sciences and Technologies (DAGRI)-directed by Professor Alessandro Parenti of the University of Florence-with the Veneto-based company Trecieffe, a historic manufacturer of stainless steel tanks and an industry leader. Fattoria di Petrognano is one of four Italian companies that had the opportunity to test the innovation in the winery.

This is a real innovation in the field of fermentation: in traditional ones, large quantities of CO2 leave the tank taking with them substances responsible for aroma such as water, ethanol, esters and higher alcohols. Added to this process called stripping is loss through evaporation. Aromy is able to reduce these losses by returning condensed aromas to the product. With this method, it is the producer himself who can “dose” the wine’s flavor profile.
