The queen of the Roman table – and beyond – seems to owe its decidedly recent origins to the early fusion trend of the Allied forces, who used the powdered eggs and bacon from their rations to dress their pasta. We’re talking about Carbonara, one of the most beloved yet divisive dishes in Italian cuisine, which has for years been at the centre of heated debates between purists and innovators, and which celebrates its own special day on 6 April. And to mark Carbonara Day, Carni Sostenibili, in collaboration with chef Nicola Longanesi, a former contestant on MasterChef, is launching a mini-guide to the perfect Carbonara: from the creaminess of the sauce and the curing of the guanciale to the choice of pasta shape, everything you need to know for a Carbonara with a unique flavour and an unmistakable bite.
