Frozen foods: the future of the frozen sector is all about innovation, quality and sustainability

Deep-freezing is proving to be an increasingly central technology in the modern food system and is playing an ever-greater role in Italians’ food choices, not only for its convenience but also as a modern response to demands for quality, safety and sustainability.

The figures bear this out: according to the 2024 Report by IIAS (Italian Institute of Frozen Foods), consumption of frozen products in Italy continues to grow, exceeding 1 million tonnes for the second consecutive year, with a 2.3% increase in 2024 and per capita consumption rising to 17.5 kg per year. This positive trend stands out against the general decline in food purchases across the country, a trend also confirmed by the initial figures for 2025: in the past year, domestic consumption – in the retail channel – increased by +1.1% compared to 2024 (NielsenIQ data).

This growth can be explained by the range of ‘benefits’ recognised by consumers: high-quality raw materials, high nutritional value, safety, transparency of label information, year-round availability, a wide variety of products, convenience of use and particularly competitive ‘value for money’ – i.e. value for money – considering the savings in time and energy and the reduction in food waste.

These are the key themes of the seminar ‘The Future of Cold Storage – Trends and Technologies in Frozen Food’,
