Ham curing: in January, the profitability gap returns in favor of PDO products
In January, the profitability of closed-cycle pig farming deteriorated significantly. According to calculations by Crefis (www.crefis.it), the profitability index for this type of farming fell by 9% compared to last December, and was also 18.8% lower than in January 2025. A decisive factor was the further decline in prices for heavy pigs destined for the protected market, which put pressure on farmers' economic results.
