On Friday 24 and Saturday 25 January, an important course for PDO Prosciutto Crudo di Cuneo slicers was held at the AgenForm Consortium headquarters in Moretta. The course was organised by the Consortium for the Protection of PDO Prosciutto Crudo di Cuneo thanks to the contribution of the Ministry of Agriculture and with the technical-scientific and logistic support of Agenform - Training Services Agency of the Province of Cuneo. The initiative was attended by about twenty people, including sector operators, counter operators and restaurateurs, who had the opportunity to learn more about the practical and theoretical techniques involved in hand-slicing raw ham.
